This was a pure experiment and it worked out beautifully. Love the flavours of the sauce with this one. Sometimes the recipes that are the best are pure creations by experimenting.
Teamed with Brown Rice also a winning combination
Recipe Serves 5
1Tb Sweet Chili Sauce
1Tb Lite Soy Sauce
1Tb Thai Fish Sauce
1tsp minced Garlic
1tsp Brown Sugar
600g Chicken Breast Fillets
2 Green Shallots
1 Red Onion
1 Red Capsicum
1 Punnet Cherry Tomatoes
1Tb Fresh Thai Basil
1Tb Canola Oil
1 Family Pack Brown Rice 2 minute microwave
Chop onion, slice tomatoes and capsicum and shallots.
Have all ingredients chopped and ready to stir fry as it takes very little time to put this together in chef terms its called mise en place
Cook rice for 3 minutes even though packet says 2 I find it is a little more easier to eat
In hot wok add chicken, oil , onion and garlic and stir fry until chicken is no longer pink then add remaining ingredients for another 2 minutes stir frying until all is mixed through.
Serve with hot rice
