Pumpkin, Spinach Beet & Pinenut Salad

More tasty salads that aim to please and different ingredients using some nuts and things like sweet potato and pumpkin.

Some great new dressings as well

15/ Pumpkin, Spinach, Beet & Pinenut Salad Serves 1

1 Handful Baby Spinach Leaves

1/2 Cup Pumpkin

3 Baby Beetroots (Balls)

1Tb Toasted Pinenuts

Dressing:

1Tb Seeded Mustard

1Tb 100% Natural Honey

Method

Cut pumpkin into cubes or slices and steam in microwave steamer for 6 minutes on high

Cut beets into half

Make Dressing by mixing ingredients together and placing in a small ramekin.

Add Spinach leaves to bowl and then add remaining ingredients around the bowl and toss lightly. Place the dressing ramekin in middle of the bowl.

Enjoy!

16/ Cranberry & Almond Salad serves 1

2-3 Stalks Kale

30g Almonds

30g Dried Cranberries

1/4 Red onion Sliced

1Tb Balsamic Vinegar

Method

Chop kale into bite size pieces

Slice onion into a dice not too chunky

add kale with remaining ingredients to container.

Mix with lid on and shake well.

Enjoy. No mess. No Plate to wash.

17/ Feta, Sweet Potato Salad – Inspired by Michelle Bridges salad

1 handful Baby Spinach

1/4 Red Onion

15g Pinenuts

3 Cherry Tomatoes

30g Feta Salt Reduced

1/2 Sweet Potato Cubed

1tsp cinnamon

Method

Place sweet potato into microwave steamer, sprinkle with cinnamonĀ and steam for 6 minutes

Cut feta into cubes and slice the red onion.

Mix together with remaining ingredients and place on plate.
