This is otherwise known as Holy Basil Chili Chicken in Thai.
Great recipe and a winning dish every time. I used a seasoning paste bought from the Asian supermarkets to make this one.
This will be a family favourite
Ingredients Serves 4
1 Pack Holy Basil Seasoning Paste
2Tb Canola Oil
500g Chicken Breast Fillet
2 Cups raw Jasmine Rice or use 2x 90 second jasmine rice microwave pouches
In skillet or wok add oil and the paste and stir fry until fragrant.
Add chicken to paste and stir fry
Meanwhile cook rice according to absorption method 2 cups raw to 4 cups water for 15 minutes then fluff with fork
Add cauliflower and broccoli to wok stir fry 2 min then turn off the heat on wok cover with lid and let sit while you cook the eggs
Fry the eggs until they are sunny side up
Serve rice in ramekin on plate or de mound the rice from ramekin keeping the round shape and place egg carefully on top
Serve broccoli cauli and chicken mixture around the plates evenly
